2 large chicken breasts butterflied and split into 4 pieces, or 4 small breasts
1/2 tsp cumin powder
1/2 tsp cayenne
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
3 tbsp butter melted
brush the chicken breasts with butter then sprinkle the seasoning mix on to the chicken evenly on both sides.
put the rest of the butter into the pan and add the chicken, cook on one side 3-5 minutes depending on the thickness,
cook on the other side for another 4 minutes or so until done through.
serve with dirty rice or jambalaya and greens, but we did broccoli because i have had a very long day and didn't feel like standing tending to collard greens for an hour...
