For a large batch:
3 good sized chicken breasts cut into one inch cubes
2-3 eggs beaten depending on the size
1 cup flour
1 cup give or take bread crumbs
1 tbsp season salt
Add 1/2 tbsp season salt to the bread crumbs and the other half to the flour and mix well.
Dredge the chicken chunks into the flour and shake off access.
Drop into the beaten eggs and shake off access.
Drop the chunks into the seasoned bread crumbs and coat well.
Shake off access and drop into a fryer at 300 degrees for about 5 minutes or until nice and golden on the outside.
Drain well an serve.
