So I stared at my spice rack and it hit me like a mac truck.. Taco strips.
I took about 2 tbsp of my homemade taco seasoning and i cut my chicken breasts into strips, crushed up about 2 cups of plain cornflakes, mixed the seasoning with the cornflakes really well. Then I took my strips and coated them in butter (don't get me started, butter is still better for you than all that other hydrogenated bs)
Then I pressed the chicken into the mixtures and set it on a baking tray and put them in the oven at 375 for 30 minutes. In hindsight I probably could have left them in a lil longer for a more crisp version but I hate dried out chicken and my oven has been wonky lately.
Anyway, this is what we got from that little experiment.
