Trader Joe's sells one that my daughter is particularly fond of.
1/2 lb pasta, I used mini Rigatoni
1/4 cup chevre
2 tbsp butter
2 tbsp flour
2 cups milk
1 tsp salt
1 tbsp parsley flakes
1 tbsp minced garlic
Boil your pasta al dente and drain.
In the same pan melt the butter then whisk the flour into it to make a rue.
Slowly add the milk while whisking and continue to whisk until all the rue has dissolved.
Add the chevre, garlic, and salt and cook while continuously stirring for about 5 minutes.
Stir until the chevre has melted.
Stir in parsley flakes and serve.
