1/2 small onion diced
1/2 red or orange bell pepper diced
1 bunch green onion minced
2 cloves garlic minced
1/4 cup olive oil
1/4 cup balsamic or red wine vinegar
4 tbsp grated parm
about 10 olives diced
a few spinach leaves or basil leaves sliced up
1-2 small chicken breasts grilled and chopped up
cook your pasta
add in all the veggies, you can certainly add more if you want
add the chicken in.
mix the oil, vinegar and cheese saving 1 tbsp of cheese to sprinkle over the top.
